American Chicken Satay
This is similar to chicken satay but it is a main course and can be served hot or warm. Six boneless, skinless chicken breasts. 1/2 cup natural chunky peanut butter 1 onion chopped fine 1 tablespoons parsley 1 tablespoon lemon juice 1/2 cup low salt soy sauce 1 teaspoon hot pepper flakes 2 cloves garlic chopped Mix the above ingredients together to make a sauce. Pour over the chicken breasts and cover and marinade in the refrigerator for several hours or overnight. Coat the breasts with all the marinade and grill or broil the chicken breasts for ten minutes on each side or until cooked. Be careful not to let the chicken burn. All the marinade should be used on the chicken breasts. It does not need additional marinade. Should additional marinade be desired, double the recipe and set aside half of the marinade for the cooked chicken breasts. If this isn't used, it can be refrigerated and used at a later date. It keeps for several days. Serve warm or hot with salad, a green vegetable and rice.

I have doubled this recipe and brought it to a pot luck dinner where it was very well received. This is the reason I mentioned that it need not be served hot.
