Apple Spice Loaf
I wanted to bake a banana bread but I didn’t have any bananas. I decided to bake an applesauce loaf because it seemed logical to me that the applesauce would be a good substitute for the bananas. I didn’t have any applesauce but I did have apples and walnuts. I used what I had and the result was great. The apple loaf that I made was very delicious and everyone liked it. 2 medium sized apples cored and peeled cut into slices 1 cup flour 1 cup sugar 1 teaspoon vanilla 1 cup chopped walnuts 2 eggs 1 cup vegetable oil 1 teaspoon baking Powder 1 teaspoon baking soda ¼ teaspoon cloves ¼ teaspoon nutmeg 2 teaspoons cinnamon Cook the apples in a microwave or on top of the stove with a small amount of water until the apples are soft. This should yield about one cup of cooked apple. Mix the flour, sugar and eggs together and then add the cooked apples. Add the flour, baking powder, baking soda, and the spices. Add the nuts. Pour into two small loaf pans and bake at 325 F for one hour. Cool on a rack and serve or freeze. |
