Beet Salad
I don’t know if anyone else loves beets but here is an easy and delicious beet salad that is very easy and keeps well in the refrigerator. One pound of beets (about 4 or 5 medium sized beets) 1 red onion 1 teaspoon salt 3 tablespoons of sugar ½ cup vinegar ½ cup water Wash beets well and then boil them until they are soft but not too soft. Let the beets cool and then slip the skin off of the beets or peel them beforehand. Slice the beets and arrange them in a serving dish. Slice the onion into thin slices and add to the beets. Dissolve the sugar in the water and add vinegar to it. Pour over the beets and refrigerate for several hours before serving. They can be served with a dollop of sour cream. If you wish, about ½ teaspoon of caraway seed can also be added. You have to like caraway because it is a strong flavor, even though the quantity used is very little. |
