Cucumber Salad
This is the cucumber salad my mom made to take on our summer picnics. 4 large cucumbers 2 teaspoons salt 1/4 cup wine vinegar 1 small onion sliced thin (optional) 1/4 warm cup water 3 Tablespoons sugar 1/2 teaspoon paprika ΒΌ cup sour cream (optional) Slice cucumbers into thin slices and sprinkle with salt. Let stand for 15 minutes. Drain and press out moisture. Dissolve the sugar in the water and add wine vinegar and paprika. Cover the cucumbers and onions with this dressing and refrigerate for one hour. Serve with sour cream if desired.
