Flan Flan is a favorite desert in Spain and in many Spanish speaking countries. It is basically a custard with caramelized sugar on the bottom. I have eaten it many times in Spanish restaurants and it is always different. I've had it in small custard cups and in a slice from a loaf. I've had a similar custard in Greek restaurants,Mexican and Cuban restaurants. This recipe was given to my daughter by a Cuban friend who believe this to be the best version. It is not as sweet as many recipes because there is no additional sugar in the custard. It is also very easy to make. 1 can Evaporated Milk 1 can condensed milk 3 teaspoons vanilla extract 6 eggs Combine the above ingredients Microwave Carmel 1 cup sugar 1/4 cup water Pour 1 cup sugar into a 2 cup oven proof measuring cup. Add 1/4 cup water. Microwave on high for 7 to 8 minutes to caramelize the sugar. Pour this into a 9 inch pie pan that is sitting in a shallow pan filled with 1" of warm water. Pour the custard into the pie pan and place the pie pan which is in the "double boiler" into a pre-heated 400F oven for one hour. Check to see that it does not get too brown. A knife inserted in the center of the flan should come out clean. Invert the flan onto a serving plate and serve.
