Florida Mango Bread
This is another recipe from my daughter in Florida. She had a wonderful mango tree in her back yard. It produced a lot of mangoes during the season in early June. These mangoes were the best and sweetest I have ever tasted. Sad to say, the last hurricane wrecked the tree and there are no more mangoes in her yard. But, this wonderful fruit is available in most supermarkets most of the year. This is a good recipe for ripe mangoes. 2 cups flour 1/2 cup oil 1/4 cup sugar 1/4 cup honey 2 eggs 2 cups mango 1/2 cup walnuts 1 teaspoon vanilla 2 teaspoon baking soda 2 teaspoons cinnamon 1/2 teaspoon salt Beat eggs until fluffy Beat in sugar, oil and honey Blend in mango Combine flour, soda and cinnamon and add gradually to the mixture. Pour into two greased bread pans and let stand for twenty minutes. Bake at 350F for one hour. |
