Hungarian Style Cabbage Soup
Good and Easy Cabbage Soup that is for One or Two People This is a good and easy recipe that is inexpensive to make and very tasty. It also keeps well. If you are a vegetarian, just eliminate the meat and use vegetable broth or plain water. 1 small onion sliced 1/2 head large cabbage shredded or one small cabbage 2 12oz cans V8 or Tomato juice 1 cup water plus one bullion cube or chicken broth 1 to 2 tablespoons vinegar — balsamic or wine or cider 1 or 2 Tablespoon Sugar or to taste 4 whole cloves Salt and pepper to taste 1 T oil Optional ingredients 1 can of beans, any kind and or 1/2 lb. Of cooked ground turkey or beef Hungarian paprika Sautee cabbage and onion in oil until wilted but not brown. Add paprika, if desired. Add juice and broth or water Add vinegar, and cloves and sugar Simmer for about 30 or 40 minutes. Add drained beans and or browned meat Cook for another 15 minutes. This keeps for a week or more in the refrigerator or it can be frozen. |
