My Grandmother’s Passover Sponge Cake
My daughter Pamela sent me some of the recipes she had gotten from my mom. Pamela is also a terrific cook in addition to being a talented singer, professor of voice at the University of Central Oklahoma, married to composer, Sam Magrill and mother of two talented daughters. My Grandmother's Passover Sponge Cake. I got this recipe from my Hungarian grandmother, Pearl Drechsler, a fantastic cook and baker. She lived to be 101 years old. Ingredients 1 cup sugar, divided 1 cup matzah cake meal 1 dozen eggs, separated Juice of 1 lemon Dash salt Directions * Sift 2/3 cup of sugar with the matzah meal. * Beat egg whites with remaining 1/3 cup of sugar until it forms stiff peaks. * Beat egg yolks with lemon juice until batter forms a ribbon. * Add egg whites to egg yolks. Then, very gently fold matzah meal/sugar mixture into eggs to form batter. NOTE: This must be done very delicately, so as not to lose any of the air beaten into the egg whites. Don't rush it. * Put batter into tube pan. Bake at 375 degrees for 35 minutes or until golden brown on top. * Let cake cool upside down. Remove from pan when cool. Serving Suggestion: slice cake in half. Spread apricot jam between the layers. Serve with whipped cream and fresh strawberries.
