Refreshing Yogurt Gazpacho
This is not Spanish gazpacho but it is a low calorie refreshing cold soup. It keeps well in the refrigerator for several days. It can be served instead of a salad. 5 radishes 1 green pepper 1 cucumber 2 green onions 1 fresh tomato 24 ounces of tomato juice 1 cup of plain yogurt 1 tablespoon of wine vinegar Finely chop all of the vegetables except the green onion. Blend the tomato juice, yogurt, and vinegar together. Pour into a bowl and add the chopped vegetables. Stir and serve with sliced green onion on top as a garnish.

I usually prepare this soup in the summer. It is very nice to have when the weather is steaming outside.
