Tilapia for Dinner
Tilapia is a very popular fish because it is very lean and takes to many different kinds of preparation. My usual preparation for a meal using Tilapia would be to just grill it or pan fry it with butter. I sometimes cook Paco’s Tilapia Sauteed with White Wine These recipes are perfect for me as mentioned in cooking for one. My daughter dredges it with flour and then pan fries it in butter. She then adds fresh lemon juice and it become Tilapia piccata. This tastes very nice with a simple addition of lightly sauteed spinach and baked potato. Once in a while it becomes necessary to invent something new, at least to me, in order to create a different tasting meal using the same ingredients. I didn't think I would need a recipe for this because I like to use my intuition and experiment with different possible food combinations that are easy and fast. One evening when I was planning to cook a Tilapia dinner for just myself, a friend stopped by to chat and gossip. I'm not one to pass up some sociability so I invited my friend to stay for dinner as I had enough fish for both of us. My dilemma was that I felt it necessary to dress up this very simple fish and serve something that appeared to be more complex than it actually was. People who like to cook have to be inventive some time and this was one such occasion. I have to admit that I was wanting to show off a bit. While I rummaged around in my refrigerator looking for possible accompaniments to the fish, we had wine, some conversation and listened to music. It was then that I decided to take the Tilapia fillets and lay them on a buttered broiler pan instead of frying them. I covered the fish with a coating of Ranch Dressing and sprinkled that with Parmesan cheese. I then broiled the fish on a lower shelf of the broiler so the dressing and cheese wouldn't burn. While the fish cooked I boiled some penne pasta and I sauteed several cloves of garlic in olive oil in order to make a light dressing for the pasta. At the same time I steamed some asparagus in order to have a green vegetable. I needed something green for this meal as both of the main items were white. I also had a cucumber in the refrigerator so I prepared a simple cumber salad. When the fish was bubbly and browned everything was ready and we sat down to eat a very delicious dinner. I was pleased with the meal and so was my friend. I have to admit that my inspiration for this kind of quick challenge cooking was a result of watching a TV program called Top Chef. This reality show cooking contest pits 12 extremely talented and inventive chefs against each other each week in two challenges. One of these is a Quick Fire Challenge and the chefs have to move fast and think quickly in order to create the required dishes. I suppose that seeing these young people come up with so many interesting ideas gave me the permission to try something that seemed like it might work. And it did. By the way, Top Chef just returned for its 5th season. I'm looking forward to seeing what happens.
